Ingredients
300g beef sausages
8 eggs
2 tbsp milk
½ red capsicum, finely diced
½ green capsicum, finely diced
½ red onion, finely diced
1 ½ tbsp olive oil, divided
salt & pepper
To serve
small corn or wheat tortillas, warmed
diced avocado
salsa fresca, or pico de gallo
sour cream
coriander leaves
Method
Remove sausage meat from casings. Whisk eggs with milk, and season with a pinch of pepper.
Place a skillet over medium heat and add 1 tbsp oil. Cook capsicum and onion for 2 - 3 mins, until starting to soften.
Add sausage to pan with vegetables, use a spatula to break up meat into bite-sized pieces, and cook a further 3 - 4 mins until sausage is cooked through.
Push sausage mixture to the sides of the pan. If necessary, drizzle remaining oil into the centre. Add egg mixture, leave for a few seconds, then pull cooked edges towards centre to form soft curds. Mix sausage and veg into eggs, and remove from heat while soft.
Spoon egg and sausage mixture into tortillas, top with avocado, salsa, sour cream, and fresh coriander.
Tips
Why not mix it up and try a flavoured beef sausage.
Also the option to add a sprinkle of cheese if desired.
