Veggie Gnocchi

Serves 4 | Prep 5 Mins | Cooking 15 Mins


Ingredients

  • 1 Brown Onion

  • 3 Cloves Garlic

  • 2 tbsp. Olive Oil

  • 2 cups cherry tomatoes, diced

  • 1 tbsp. Italian Seasoning

  • Salt and Pepper to taste

  • 500g Gnocchi

  • Parmesan cheese, to garnish

  • Fresh Basil, to garnish


Method

  1. Dice onion, crush tomatoes, and mince garlic.

  2. Heat a large frying pan with high sides over medium heat. Add olive oil and saute onions until they begin to go translucent (4-5 minutes). Add garlic and saute for another 30 seconds.

  3. Dice tomatoes and add to pan with Italian seasonings, salt, pepper, and 2 cups water.

  4. Add uncooked gnocchi and stir together. Simmer for 5 minutes until the gnocchi is cooked.

  5. Serve with parmesan cheese and fresh basil.
